Chocolate pineapple sponge cheesecake

- 1 20cm layer chocolate sponge cake or chocolate butter cake or chocolate cake mix. shopping list
- 2 packages (8oz ) cream cheese, softened. shopping list
- 2 eggs shopping list
- Half can (390g) sweetened condensed milk. shopping list
- 1/4 cup heavy cream shopping list
- 1 tsp vanilla shopping list
- 4 medium pineapple rings, drained and diced shopping list
How to make it
- Preheat oven to 325 F.
- Grease a 23cm cake tin with butter, line with baking paper and grease the paper. Line the chocolate sponge cake layer in the bottom and set aside.
- Beat cream cheese until creamy and fluffy, add eggs one at a time with vanilla, add condensed milk in a steady stream and beat well, add cream and beat again until only combined. Finally add the diced pineapple and blend well.
- Pour over the sponge layer and immediately run to the oven, you don’t want the sponge layer to absorb a lot of the batter.
- Bake for 45 minutes or until set. Cool in the oven with door ajar and then chill for
- 2-3 hours.
