Chocolate Pineapple Sponge Cheesecake Recipe

Ingredients

1 20cm layer chocolate sponge cake or chocolate butter cake or chocolate cake mix.

2 packages (8oz ) cream cheese, softened.

2 eggs

Half can (390g) sweetened condensed milk.

1/4 cup heavy cream

1 tsp vanilla

4 medium pineapple rings, drained and diced

Directions

Preheat oven to 325 F.

Grease a 23cm cake tin with butter, line with baking paper and grease the paper. Line the chocolate sponge cake layer in the bottom and set aside.

Beat cream cheese until creamy and fluffy, add eggs one at a time with vanilla, add condensed milk in a steady stream and beat well, add cream and beat again until only combined. Finally add the diced pineapple and blend well.

Pour over the sponge layer and immediately run to the oven, you don’t want the sponge layer to absorb a lot of the batter.

Bake for 45 minutes or until set. Cool in the oven with door ajar and then chill for

2-3 hours.
