Ingredients
  • 1 lb ground beef
  • 1 onion
  • 1 1/2 c minute rice
  • 2 1/2 cups beef broth (3 boullion cubes)
  • 1/2 t salt
  • 1 can sliced mushrooms (use fresh if desired)
  • 1 clove garlic finely chopped
  • 3 t curry powder
  • 1/4 t cayenne pepper
  • 1 T worcestershire sauce
  • Sour cream

Directions
  1. Brown beef till no longer pink; drain fat
  2. Add rice and finish browning
  3. Add the remaining ingredients
  4. Heat to boiling; stir well and cover
  5. Simmer 20 minutes or until most of liquid is absorbed
  6. Garnish with dollops of sour cream

I made this last night and the family loved it! I was missing a couple of things so I made some substitutions - tomatoes for the mushrooms, chicken broth for beef broth, buckwheat groats for rice. It was a nice meal served with some steamed broccoli w/ garlic. Thanks so much - quick and easy!
