Raspberry Ricotta Fool

Nice light dessert with raspberries and sweetened ricotta cheese and topped with toasted almonds.
Ingredients
- 1c ricotta cheese shopping list
- 3Tbs sugar shopping list
- 2tsp fresh grated orange peel shopping list
- 1/2tsp vanilla extract shopping list
- 1c heavy(whipping ) cream shopping list
- Two 1/2 pt. raspberries shopping list
- 1/4c fresh orange juice shopping list
- Garnish: toasted sliced almonds shopping list
How to make it
- Have ready 6 dessert glasses
- Process first 4 ingredients in a blender or food processor until smooth. Beat cream until stiff. Fold in ricotta mixture.
- Gently tossraspberries with orange juice to moisten
- Spoon about half the ricotta cream into a large sturdy zip-loc bag(refilling when necessary.) Cut a 1" opening off 1 corner of the bag.
- Put 3-4 raspberries in bottom of each dessert glass. Pipe on about
- 1/2 the ricotta cream. Top with remaining berries,then remaining ricotta cream. Garnish with almonds.
