How to make it

  • Drain salmon and reserve the liquid
  • In a large bowl mix the salmon, liquid, eggs, salt, 1/3 cup crushed corn flakes (or saltines) and baking powder
  • Shape into patties or croquets
  • Coat the patties by rolling them in the remaining 1/4 cup crushed corn flakes (or saltines)
  • Heat the oil for frying in a skillet or frying pan and fry the croquettes until golden brown
  • Serve with a light white sauce or hollandaise or lemon wedges
