A nice quick lunch or dinner that can be served with a white or hollandaise sauce and a fresh green salad.

Ingredients
  • 1 7 1/4 oz can of salmon
  • 2 eggs, beaten
  • 1 tsp oil
  • 1/3 cup crushed corn flakes or saltine crackers (for mixing)
  • 1/4 cup crushed corn flakes or saltine crackers (for coating)
  • 1 tsp baking powder
  • Oil for frying

Directions
  1. Drain salmon and reserve the liquid
  2. In a large bowl mix the salmon, liquid, eggs, salt, 1/3 cup crushed corn flakes (or saltines) and baking powder
  3. Shape into patties or croquets
  4. Coat the patties by rolling them in the remaining 1/4 cup crushed corn flakes (or saltines)
  5. Heat the oil for frying in a skillet or frying pan and fry the croquettes until golden brown
  6. Serve with a light white sauce or hollandaise or lemon wedges
