Salmon Croquettes

- 1 7 1/4 oz can of salmon shopping list
- 2 eggs, beaten shopping list
- 1 tsp oil shopping list
- 1/3 cup crushed corn flakes or saltine crackers (for mixing) shopping list
- 1/4 cup crushed corn flakes or saltine crackers (for coating) shopping list
- 1 tsp baking powder shopping list
- oil for frying shopping list
How to make it
- Drain salmon and reserve the liquid
- In a large bowl mix the salmon, liquid, eggs, salt, 1/3 cup crushed corn flakes (or saltines) and baking powder
- Shape into patties or croquets
- Coat the patties by rolling them in the remaining 1/4 cup crushed corn flakes (or saltines)
- Heat the oil for frying in a skillet or frying pan and fry the croquettes until golden brown
- Serve with a light white sauce or hollandaise or lemon wedges
