How to make it

  • Crust:
  • Mix cookie crumbs (reserving 1 cup) with the melted butter and press into an 8x8 baking pan.
  • Bake at 400F for 5 minutes.
  • Remove from oven and cool.
  • Topping:
  • In a saucepan over medium-low heat, melt together the 1/2 cup of butter with the chocolate chips, vanilla and nuts.
  • Add in the icing sugar and beaten egg and stir until very smooth, about one minute.
  • Spread this mixture atop the cooled crust.
  • Sprinkle the reserved crumbs on top.
  • Let sit or refrigerate before cutting into squares.
  • You can leave the nuts out of this recipe very successfully. In fact, its much creamier if you do. Freezes very well.

    Oh, I didn't know that Dad's weren't in the US! Thanks for mentioning it! The taste is alot like graham wafers mixed with brown sugar -- or you could try a generic coconut or oatmeal cookie. To be honest, I was surprised when I looked at the recipe for the first time in years (I make them by memory now) because it says coconut cookies but I'm certain I always use oatmeal! Even when my mom first made them I never tasted coconut at all, so I don't think there is much coconut flavour in Dad's coconut cookies. But I really think a good substitution would be the graham wafers with a cup of brown sugar mixed in. But if you love coconut, your vanilla wafer idea would certainly work well too and probably be delicious!

    Oh wow - these sound really great, Auntybea. I'm trying to think if Kraft (or anyone) has a crunchy cookie equivalent to Dad's Cookies in the U.S. I really want to try this and I'm thinking I could sub in maybe crushed vanilla wafers, coconut and coconut flavoring? (I love coconut.) I'm saving these to try...thank you!
