How to make it

  • Blend first 6 ingredients; set aside. Combine flour and salt in plastic bag. Add 2 or 3 pieces of chicken at a time; shake to coat. Brown chicken in oil in skillet over medium heat, turning with tongs. Cover; cook 15 minutes. Drain off fat; add cherry sauce. Cover; simmer oner very low heat skin side up, 15 minutes. Turn; simmer 15 minutes moreor until tender.
  • Serve with Brown Rice or Egg Noodles.

    I have, literally, been making this since the late 1960s. I had lost track of the recipe book it came from, and when I re-wrote it to a Word document after a hiatus, I couldn't recall the amount of lemon juice called for. I also realized that the spices don't seem to be enough anymore, but maybe that's because chickens got bigger,or appetites, and a 12" skillet now held 5 pounds and more, in a single layer. Be careful about upping ingredients - the worst result is the sauce ending up watery and super-clovey. Flaked mace doesn't work well either. Crushed allspice is ok, as is powdered. A very low simmer isn't necessary; again, depends on whether you put in 10-12 oz of cherry preserves (not jelly, not jam) or decided to go for 30. (Bad idea; make two batches instead.I have ruined several large batches, but did find 20-24oz is doable; just be careful and taste the sauce before you add more than 3 or 4 times the spices; yes, that's more than double.) ALSO, be very careful about draining the fat out of the skillet at the end of the 1st 15 minutes; you need super strength to hold the lid in place on the tilted skillet, just open a couple millimeters- better to remove the chicken to a platter, drain the pan, then return the pieces. (Seems obvious? yeah, but... ) By the way, using a tightly lidded plastic storage container works much better for me, than a plastic bag.
