Skillet Cherry Chicken Recipe

Chicken cooked on top of stove with Cherry preserves.

Ingredients
- 1 12-ounce jar (1cup) cherry preserves
- 2 Tbs. lemon juice
- 4 whole cloves
- 1/4 tps. salt
- 1/4 tps. allspice
- 1/4 tps. mace
- 1/2 cup all-purpose flour
- 1 tps. salt
- 1 21/2-to 3-pound ready to cook broiler-fryer chicken cut up
- 1/4 cup salad oil
Directions
- Blend first 6 ingredients; set aside. Combine flour and salt in plastic bag. Add 2 or 3 pieces of chicken at a time; shake to coat. Brown chicken in oil in skillet over medium heat, turning with tongs. Cover; cook 15 minutes. Drain off fat; add cherry sauce. Cover; simmer oner very low heat skin side up, 15 minutes. Turn; simmer 15 minutes moreor until tender.
- Serve with Brown Rice or Egg Noodles.
