Carrot Corn Muffins Recipe
A different take on the usual corn bread type muffin, this is sweetened and has the added bonus of carrot, raisin and nuts.

Ingredients
  • 1 cup flour
  • 1 cup corn meal
  • 4 tsp of baking powder
  • 1/2 tsp of salt
  • 1/4 cup of firmly packed brown sugar
  • 1 cup of grated carrot
  • 1/4 cup of raisins
  • 1/4 cup of chopped pecans
  • 1 egg beaten
  • 1 cup of milk
  • 1/4 cup of canola oil

Directions
  1. Grease muffin tins very well.
  2. Mix dry ingredients.
  3. Add sugar, raisins and nuts.
  4. Add egg, milk and oil.
  5. Mix well.
  6. Fill prepped muffin tins 3/4 full.
  7. Bake in preheated oven 400 degree oven for 20-25 minutes.
  8. Serve with whipped honey butter warm for breakfast.

I love muffins like this ...and with the 'extra' i think i should beabke to eat 2 because they are healthy... eating my fruits and veggies .. nice post..MF
