  • 1-3/4 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 eggs, beaten
  • 2 cups buttermilk
  • 1 cup cracklings

Directions
  1. Preheat oven to 400-degrees F.
  2. Combine cornmeal, flour, baking powder, and soda; mix well.
  3. Add eggs, buttermilk, and cracklings, stirring well.
  4. Heat a well-greased 9-inch cast-iron-skillet in oven for 3 minutes.
  5. Pour batter into hot skillet.
  6. Bake for 35 minutes or until golden brown.
