How to make it

  • Preheat oven to 400-degrees F.
  • Combine cornmeal, flour, baking powder, and soda; mix well.
  • Add eggs, buttermilk, and cracklings, stirring well.
  • Heat a well-greased 9-inch cast-iron-skillet in oven for 3 minutes.
  • Pour batter into hot skillet.
  • Bake for 35 minutes or until golden brown.
