Basil Oil

- 3 cups loosely packed fresh basil leaves, rinced shopping list
- 3/4 cup extra virgin olive oil shopping list
- 1/2 cup canola oil, or safflower oil shopping list
- 1 teaspoon canola oil shopping list
How to make it
- quickly plunge the basil leaves in boiling water and then shock
- in ice water. Dry off any excess water with paper towel
- combine the basil, olive oil and canola oil in a saucepan and warm
- gently for 8 to 10 minutes
- place in a food processor; process 30 seconds
- pour into a very clean jar, cool
- cover and let steap in the refrigerator for 24 to 48 hours
- line a funnel with a paper coffee filter and soak with the teaspoon
- of canola oil
- pour oil into funnel to drip into another very clean jar (takes time)
- cover or cork tightly, label and date. Store in refrigerator.
- remove a little for a squeeze bottle, squeese and brush on.
