Ingredients
  • 2 tbls. olive oil
  • 1 red bell pepper, cut into 1/4 inch strips
  • 1 yellow bell pepper, cut into 1/4 inch strips
  • 1 onion, sliced thinly
  • 2 zucchini, cut into 1/2 inch thick disks
  • 2 yellow summer squash, cut into 1/2 inch disks
  • 2 tbls. balsamic vinegar
  • Salt and pepper to taste

Directions
  1. Heat oil in large skillet to medium high
  2. Add peppers and onion and saute until tender
  3. Add zucchini and squash and saute until tender, about 8 minutes
  4. Add vinegar and boil until liquid is reduced to glaze and coats all vegetables
  5. Salt and pepper

Sounds great. And easy - I like easy! Maybe this will get the kids to eat their vegetables; they both like balsamic vinegar. Love the picture best, though.
