Balsamic Vinegar Glazed Vegetables

- 2 tbls. olive oil shopping list
- 1 red bell pepper, cut into 1/4 inch strips shopping list
- 1 yellow bell pepper, cut into 1/4 inch strips shopping list
- 1 onion, sliced thinly shopping list
- 2 zucchini, cut into 1/2 inch thick disks shopping list
- 2 yellow summer squash, cut into 1/2 inch disks shopping list
- 2 tbls. balsamic vinegar shopping list
- salt and pepper to taste shopping list
How to make it
- Heat oil in large skillet to medium high
- Add peppers and onion and saute until tender
- Add zucchini and squash and saute until tender, about 8 minutes
- Add vinegar and boil until liquid is reduced to glaze and coats all vegetables
- Salt and pepper
