Ingredients
  • 150 ml coconut milk
  • 3 limes, juice and rind
  • 100 ml castor sugar
  • 325 g cream cheese
  • 350 ml coconut, toasted

Directions
  1. Place all ingredients except the coconut in a food processor and process until smooth.
  2. Pour into a freezer container and freeze for four hours.
  3. Return to the food processor and process slightly to break up any ice crystals that have formed.
  4. Stir in the coconut and freeze until smooth.
  5. Serve with berries of your choice or tropical fruit.
  6. Makes 1 litre.

Ohhhhhh.... this sounds heavenly! My favorite hand lotion is Coconut Lime Verbena so if it tastes anything like that smells its going to be a huge hit with me. Thanks so much for posting!
