The BEST Crockpot Potato Soup Recipe
I have made this for many years now and everyone always loves it! I like my potato soup to be a bit thicker, so towards the end I take an old-fashioned potato masher & mash some off the potatoes to thicken the soup a bit.

Ingredients
  • 5lbs. potatoes; peeled and coursely chopped
  • 1 sm. onion; chopped
  • 8oz. cream cheese; softened
  • 3-14.5oz. cans reduced sodium chicken broth
  • 1can cream of chicken soup
  • 1/4t. pepper
  • GARNISHES:
  • crisp bacon; crumbled
  • shredded cheddar cheese
  • sour cream
  • sliced scallions

Directions
  1. Put potatoes & onion in crock-pot.
  2. Combine the cream cheese, chicken broth, cream of chicken soup & the pepper. Add this mix to teh crock-pot.
  3. Cover & cook on LOW for 8-10 hours or on HIGH for 4-5 hours.
  4. After cooking time, mash the potatoes if you want the soup to be thicker.
  5. Ladle into bowls and garnish with a dollop of sour cream and the cheese & bacon. Sprinkle with sliced scallions.

I recently experimented and found that just a couple of dashes of liquid smoke make the best potato soups even better! Adds a new depth to the recipes!


I've made this recipe several times, I LOVE it. Especially because it saves the milk!


Oh good heavens, this would be something I could just fall in love with and my favorite takeout restaurant would lose my steady business. LOL Can't wait to give this a try in the crock pot. I could have a party and feed a lot of my friends and look like the smartest cook on the block. YUM


This sounds good, and I like the idea of the liquid smoke..love that stuff!


I use the same recipe, but instead of Cream of chicken soup, I add 1 can evaporated milk and a tsp of chicken bouillion...evaporated milk adds some thickness and richness...but sounds good as listed!!
