How to make it

  • Put potatoes & onion in crock-pot.
  • Combine the cream cheese, chicken broth, cream of chicken soup & the pepper. Add this mix to teh crock-pot.
  • Cover & cook on LOW for 8-10 hours or on HIGH for 4-5 hours.
  • After cooking time, mash the potatoes if you want the soup to be thicker.
  • Ladle into bowls and garnish with a dollop of sour cream and the cheese & bacon. Sprinkle with sliced scallions.

    It is simple to make but it really takes a lot of time to prepare .One can also use cornflour for thickening it.

    ariadnebarzane ate it and said...
    Love to use this recipe as a base and add other goodies to it...Sausage bits, bacon, finely chopped bell pepper....I do like the idea of using the evaporated milk and chicken bullion instead of the cream of chicken soup...Will have to give that a try and see what kind of flavor it gives. Definitely a recipe to use your imagination with...thanks for sharing it!

    I made this for the first time today...using a 10-lb can of sliced potatoes we were given from a friend. I added garlic, mushrooms, and broccoli. Everyone loved it!

    I have cooked this soup recipe about a dozen times since I found it on here, and everytime it has a bit different taste to it then the last time...and you save your milk! Awesome recipe!! A++

    This recipe was fabulous! I used whipped cream cheese instead of a regular block. I don't know if that changed the consistency or taste but it was delicious. This recipe is a keeper!

    Made this a few weeks ago and found it a little bland and watery for our liking, made it again last night much better with the following changes, I lightly fried the potatoes and onion (quartered the onions and sliced thin) in some butter, for some added flavor, deglazed the pan with some of the stock (used 1 less can of stock than called for)and added it to the mix, I also added 4 cloves of garlic to the mix along with 1/2 a bunch of thin sliced scallions and some chopped chives for color. when ready I added some grated sharp cheese about 3/4 of a 1/2 lb block and melted it in.

    I expected more from the good reviews, but maybe we have different ideas of what good potato soup is. This tasted like chunks of potato in chicken water. Which I suppose is what it was. I just thought the slow-cooking might change something about that, but no. I poured it into a soup pot when it was "done" and doctored it to get it to taste like anything at all.

    I use the same recipe, but instead of Cream of chicken soup, I add 1 can evaporated milk and a tsp of chicken bouillion...evaporated milk adds some thickness and richness...but sounds good as listed!!

    I recently experimented and found that just a couple of dashes of liquid smoke make the best potato soups even better! Adds a new depth to the recipes!
