Italian Wedding Soup

- 1/2 lbs lean ground beef shopping list
- 1 egg slightly beaten shopping list
- 2 tbs breadcrumbs shopping list
- 1 tbs parmesan cheese shopping list
- 1/2 tsp dried basil shopping list
- 1/2 tsp onion powder shopping list
- 5 3/4 cups chicken broth shopping list
- 2 cups chopped escarole or spinach shopping list
- 1/2 cup orzp pasta uncooked shopping list
- 1/3 cup finely chopped carrots shopping list
- grated parmesan cheese shopping list
How to make it
- In a medium bowl combine, meat, egg, bread crumbs, parmesan chsses, basil& onion powder, shape into 3/4 balls
- in large pot , heat broth to boilling stir in spinach, orzo, carrot & meatballs
- return to boil: reduce heat to medium
- cook at slow boil for 10mins or until orzo is tender
- stir frequently to avoid sticking
- serve with additional parmesan cheese sprinkled on top

Thank you for posting one of my all time favorite soups. I love this with fresh spinach in the spring and fall.
