How to make it

  • Mix all ingredients together in a mixing bowl.
  • Place the lamb cutlets in the bowl and coat well.
  • Cover and leave overnight in the fridge to marinate.
  • Next day, remove the marinated cutlets from the fridge.
  • Place over hot charcoal coals on a barbecue and cook for 5-6 minutes, or until your liking.
  • Remove cutlets from the barbecue and place on a serving platter.
  • Serve hot with mint sauce and your choice of mixed salad.
