This is a wonderful chowder if you don't like fish chowders. Comes from my cousin Donna who is an awsome cook. We love Corn Chowder...hope you do too,

Ingredients
  • 2 Tbs. vegetable oil
  • 3 scallions (white and light green parts) chopped
  • 1 medium onion, chopped
  • 1 medium leek (white and light green parts) chopped
  • 2 cups fresh corn (from 4 ears) or fresh frozen in a pinch!
  • 1 medium baking potato, peeled and sliced
  • 4 cups low sodium vegetable broth
  • 2 Tbs. fresh basil,chopped
  • 1 Tbs. fresh mint, chopped

Directions
  1. In a large sauce pan, heat oil over medium-high heat.,
  2. Add scallions, onions, and leeks.
  3. Reduce heat to medium and cook, stirring often, until vegetabvles are softened, about 8 minutes.
  4. Stir in corn, potato, broth, basil and mint.
  5. Increase heat to medium-high and bring to a boil.
  6. Reduce heat to medium-low, cover and simmer until potato is tender, 15-20 minutes.
  7. Puree mixture with an immersion blender or in food processor in batches until almost smooth but still a little crunchy, season with salt and fresh ground pepper to taste.
  8. You may wish to garnish each bowl with crumbled cooked bacon.
