Donnas Fresh Corn Chowder

- 2 Tbs. vegetable oil shopping list
- 3 scallions (white and light green parts) chopped shopping list
- 1 medium onion, chopped shopping list
- 1 medium leek (white and light green parts) chopped shopping list
- 2 cups fresh corn (from 4 ears) or fresh frozen in a pinch! shopping list
- 1 medium baking potato, peeled and sliced shopping list
- 4 cups low sodium vegetable broth shopping list
- 2 Tbs. fresh basil,chopped shopping list
- 1 Tbs. fresh mint, chopped shopping list
How to make it
- In a large sauce pan, heat oil over medium-high heat.,
- Add scallions, onions, and leeks.
- Reduce heat to medium and cook, stirring often, until vegetabvles are softened, about 8 minutes.
- Stir in corn, potato, broth, basil and mint.
- Increase heat to medium-high and bring to a boil.
- Reduce heat to medium-low, cover and simmer until potato is tender, 15-20 minutes.
- Puree mixture with an immersion blender or in food processor in batches until almost smooth but still a little crunchy, season with salt and fresh ground pepper to taste.
- You may wish to garnish each bowl with crumbled cooked bacon.
