How to make it

  • In a large sauce pan, heat oil over medium-high heat.,
  • Add scallions, onions, and leeks.
  • Reduce heat to medium and cook, stirring often, until vegetabvles are softened, about 8 minutes.
  • Stir in corn, potato, broth, basil and mint.
  • Increase heat to medium-high and bring to a boil.
  • Reduce heat to medium-low, cover and simmer until potato is tender, 15-20 minutes.
  • Puree mixture with an immersion blender or in food processor in batches until almost smooth but still a little crunchy, season with salt and fresh ground pepper to taste.
  • You may wish to garnish each bowl with crumbled cooked bacon.
