Chicken Tikka Masala Recipe
i love all sorts of curries, and my little 3yr old loves them too, so i wanted to start making my own as there are so many food colours and additives in the bought varieties! my daughter loves this!!

Ingredients
  • 6 cloves of garlic
  • 3 inch piece of fresh ginger, peeled
  • 2-3 fresh red chillies, deceeded
  • olive oil
  • 1 tbsp mustard seeds
  • 1 tbsp paprika
  • 2tsp ground cumin
  • 2tsp ground coriander
  • 3tbsp garam masala
  • 200g natural yoghurt
  • 4 medium chick breasts, cut into large chunks
  • 1tbsp butter
  • 2 medium onions peeled, finely sliced
  • 2tbsp tomatoe puree
  • small handful of ground cashews or almonds
  • sea salt
  • 115ml double cream
  • a handful of fresh coriander, chopped
  • juice of 1-2 limes

Directions
  1. grate the garlic and gingeron the finest side of your grater, and set aside.chop the chillies as finely as u can and mix them in with the ginger and garlic.
  2. heat a good splash of oil in a pan and add the mustard seeds. when they start to pop, add them to the ginger and garlc mixture, along with the paprika, cumin, ground coriander and 2tbsp of the garam masala.
  3. put half this mix in a bowl and add the yog and chicken, stir and leave to marinate for half hour.
  4. melt the butter in the pan u cooked the mustard seeds in, add the onions and other half of your spice mix.
  5. cook slowly on a low heat for 15mins, without browning.
  6. add the tomatoe puree, ground nuts,1 pint of water and half tsp of salt. stir well and simmer for for few mins.
  7. reduce the sauce till it thickes a kittle bit, and set aside.
  8. place the marinated chicken under a hot grill or on a gridddle pan and cook through
  9. warm the sauce, add the cream and other tbsp of garam masala.
  10. bring to boiling then remove from the heat, add the chicken stir and sprinkle with the chopped coriander.
  11. serve with some lovely basmati rice or a rice of your choice, some popadoms or naan.
  12. enjoy!!!

Thank you for the recipe, it looks great. I love Thai food and this version looks wonderful. I think its gonna be great for a middle of winter dinner!
