How to make it

  • Base:
  • Crush cookies into small crumbs
  • Combine with melted butter
  • Press into glass or metal pie plate, forming an even layer in bottom and sides
  • Chill while preparing filling
  • Filling:
  • Heat butter and brown sugar in a non-stick sauce pan over low heat until butter melts and sugar dissolves
  • Add condensed milk and bring toa a gentle boil, stirring continuously to make the caramel (toffee)
  • Spread filling over the chilled base and chill for about an hour or until the filling is firm
  • To Serve:
  • Slice 3 bananas and fold them into the whipped cream
  • Spoon mixture over toffee base
  • Slice remaining banana and decorate top
  • Sprinkle with grated chocolate
