Banoffee Pie

- Base: shopping list
- 250g (9oz )crushed graham crackers, digestives or vanilla wafers shopping list
- 100g (3 1/2oz) butter, melted shopping list
- Filling: shopping list
- 100g (3 1/2oz) butter shopping list
- 100g (3 1/2oz ) dark brown sugar shopping list
- 397g (14oz) can condensed milk shopping list
- 284 ml (10oz) double cream, whipped (or cool-whip) shopping list
- 4 small bananas shopping list
- grated chocolate shopping list
How to make it
- Base:
- Crush cookies into small crumbs
- Combine with melted butter
- Press into glass or metal pie plate, forming an even layer in bottom and sides
- Chill while preparing filling
- Filling:
- Heat butter and brown sugar in a non-stick sauce pan over low heat until butter melts and sugar dissolves
- Add condensed milk and bring toa a gentle boil, stirring continuously to make the caramel (toffee)
- Spread filling over the chilled base and chill for about an hour or until the filling is firm
- To Serve:
- Slice 3 bananas and fold them into the whipped cream
- Spoon mixture over toffee base
- Slice remaining banana and decorate top
- Sprinkle with grated chocolate
