I am diabetic. I have good days and bad days. I like to eat this soup on my bad days because their is no carbs in it at all! Plus it's total comfort food

Ingredients
  • 1/2 medium head cabbage, chopped
  • 4 stalks celery, chopped
  • 1 sweet onion, finely diced
  • 3 cups vegetable broth
  • 1 cup chicken broth
  • 1 cup water

Directions
  1. Place the cabbage into a pot.
  2. Steem celery and onion in 2 tablespoons water on high setting for 4 minutes in the microwave.
  3. Add to pot with the cabbage.
  4. Add in water and broths.
  5. Cover, and bring to a boil, then continue boiling for 30 minutes.
  6. Lower the heat to simmer and cook for 2-3 hours.
  7. You can add sausage or kelbassa if you like and still no carbs!
