    *Laughs*, yep, it's dangerous. I don't recommend eating this everyday, unless you want to make your cardiologist and your personal trainer very wealthy. But they are very good. By the way, if you plan on making these, set aside the better part of an afternoon to make them, and the rest of the evening for relaxation. You can cut the fat content by using yogurt and 'lite' cheese, but it's just not the same. This recipe makes 12 to 16 enchiladas.

    I love making these. I have never had a complaint. They are dangerous. They also tend to get good conversation started as they are quite the comfort food. For those who indulge in fine libations of exquisite character, suggested wines include riesling or gewurztraminer, or a nice pilsner beer. Best to keep an after dinner pot of coffee ready too.

    Seafood -and- swiss cheese -and- heavy cream? Methinks I've just died and gone to heaven. Three of my favourite vices rolled into one yummy tortilla. This group is going to make me fat!
