How to make it

  • Dough preparation by hand ...
  • 1. Place the yeast into a large, ceramic bowl. Add milk. Do not stir. Let it sit for 10 minutes in the sun. Whisk the eggs and melted butter in. Slowly fold in the white sugar and salt, followed by the flour, half a cup at a time while stirring with a wooden spoon.
  • 2. When the ingredients are all mixed, set the spoon aside and begin to knead the dough with your hands, gathering from the edges and pushing down into the center with the heel of your hands, and repeating. Knead for 10 minutes, then cover the bowl with a teatowel and set on the counter or your table in a patch of sun. Sit with a good book and a cup of coffee and let the dough rise until it has doubled in size (about one hour), then punch it down and knead it again. Let it rise in the sun once more until doubled again.
  • Speed rise: If you don't have the time (~cough~ make it anyways) ... to sit and read a book and enjoy the sun while your bread is rising, you can heat your oven to 200 degrees and then turn it off. Cover the dough with a moist paper towel over the bowl, and put in the oven for around 1 hour. The dough should double in size.

  • Place the ingredients for the dough into the pan of your bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.

  • 3. After the dough has doubled in size turn it out onto a lightly floured surface. Cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
  • 4. Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. You can use dental floss to make cutting the dough easier.
  • 5. Line a 9x13 inch baking pan with wax paper that has been greased with butter or margarine. Place rolls in it. Poke in the top edge of each roll to make a depression like the top of a heart, then pinch the bottom edge to finish the shape. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
  • 6. Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt.
  • 7. When the rolls are done baking, remove them immediately so they don't stick. Take the pan out and turn it upside down on a large platter covered with wax paper so the sugar drips back down over the rolls. Spread frosting on them while they are still warm, and serve.

    I know it almost kills me to walk by without stopping. It's that home cooking smell, like apple pie. The second cinnamon or nutmeg are involved I'm putty.

    I think those shops that sell cinnamon rolls deliberately set up fans to make the delicious aroma waft over nearby shoppers. It is irresistable.
