A quiche type cassarole using bread in place of pie crust,savory and hearty one dish meal serve with a fruit salad for brunch125003.

Ingredients
  • 1 pound bacon slices cut and fried/drain grease
  • 1/2 pound ham chopped
  • 1 small onion
  • 1/2 red pepper
  • 1/2 green pepper
  • 1 /2 cup mushrooms
  • 3 garlic cloves
  • aprox 12 slices white bread,crusts removed
  • 1 pound favorite cheese (I used a combo of monteray jack and sharp cheddar )
  • BATTER
  • 4 cups cream or half and half
  • 8 eggs
  • pinch cayenne
  • other prefered herbs or spice
  • whisk together well.

Directions
  1. butter your baking pan 12x14
  2. assemble 6 slices on bottom of pan
  3. butter 1 side of and cut remaining slices in half and assemble around sides ,butter side out.(very attractive if you cut on the diagonal)

  5. chop and sautee the onions,peppers and garlic till soft.
  6. add your mushrooms.
  7. mix bacon and ham into the vegetables and then put this mix into your prepared dish.
  8. stir your batter again and pour over the whole.
  9. add the cheese on top.
  10. at this point you can cover and refridgerate over night .
  11. or
  12. allow to sit for 15 minutes and then bake at 350 degrees till brown and set up, check the middle aprox 40-50 min

  14. this can be used as a supper dish as well ,works great with any left over meats and vegetables. like chicken and broccoli.

Had this at a bed and breakfast, was wonderful, but my daughter turned hernose up , so have been reluctant to make at home when it's just me and the kids... I need some guests!


I have a group coming for brunch this morning, so my husband and this looks perfect. We'll make additions and add them in the alterations section. Can't wait to see how the group likes this !

Alterations


My husband and I made some slight alterations. We added artichoke hearts, sliced tiny tomatoes in half, and sausage/bacon. Then we pureed roasted garlic to add to the batter. Hope our brunch crowd likes it ! Smells wonderful as it cooks.
