Alright you SPAM lovers out there!! Here is something easy & good!

Ingredients
- 1 can SPAM
- 1 8oz. box macaroni
- 1 stick margarine
- 1 medium onion
- 1 8oz. can diced tomatoes
- Parmesan cheese
Directions
- Preheat oven to 400 degrees F.
- Cut SPAM in small blocks and saute in margarine with onions until SPAM and onions are lightly browned.
- In a medium sized casserole dish, put cooked macaroni, diced tomatoes, SPAM and onions; stir.
- Sprinkle top with parmesan cheese.
- Cover casserole dish with foil and bake in preheated oven for 30 minutes.

It's amazing what can be done with Spam. I personally don't eat it but my dad does...he loves it. =) I will pass this recipe along to him.

Oh yeah - this is old school comfort food. Easy and hearty. We used to have Spam occasionally when I was a kidlet. Then I went for about 20 years without eating Spam...but am finding it's alright to bring out every once in a while. Very nostalgic. Great post, Jett hunny bunny...thanks!
