Chicken Poupon Recipe
Adapted from Mom's recipe (it was attributed to Grey Poupon on her recipe card) Quick fix for no-time to cook nights. Bonus, no added salt for my hypertensive husband

Ingredients
  • 4 tbsp of Grey Poupon Dijon Mustard
  • 2 tbsp of vermouth, dry white (our sub for water in original)
  • 1 tsp of garlic powder (2 cloves of garlic fresh, minced, my sub)
  • 1/2 tsp of dried Italian seasoning (1 tsp of tarragon, my sub)
  • 4 boneless skinless chicken breasts, pounded to even thickness
  • lemon wedges

Directions
  1. In large bowl, or plastic bag, combine mustard, vermouth, garlic, italian seasoning.
  2. Add chicken and smush around to coat.
  3. Place chicken in a 9x9x2 baking pan.
  4. Bake at 375 degrees for 25 to 30 minutes. Until chicken test done with meat thermometer
  5. Garnish with a lemon wedge to squeeze over the chicken.

I made Chicken Poupon for dinner last night. I had marinated the chicken the night before last. Also, I was out of tarragon and Italian seasoning so I used Herbes De Provence instead. That spice blend with the Vermouth was Fantastic! We loved the flavors. Next time, I'm going to use tarragon and grill the meat. Thank you for a great recipe!
