Fruit - Tastic Secret Muffins

- 3 oz low-fat silken tofu shopping list
- 1/2 cup unsweetened applesauce shopping list
- 1/4 cup mashed potatoes, room temperature shopping list
- 2 large bananas, chopped shopping list
- 1/4 cup brown sugar shopping list
- 2 tbsp maple syrup shopping list
- 1 tbsp grated fresh ginger shopping list
- 1 tsp vanilla shopping list
- 1 cup whole wheat flour shopping list
- 1 cup flour shopping list
- 1 tsp baking soda shopping list
- 1 tbsp baking powder shopping list
- 1 tsp ground cinnamon shopping list
- 1 cup fresh (or thawed and drained frozen) strawberries, diced shopping list
How to make it
- Preheat the oven to 375 F. Grease 12 large muffin cups and the top of the tin (these are biggies!).
- Puree the tofu, applesauce, potatoes, bananas, sugar, syrup, ginger and vanilla. Set aside.
- Whisk together the dry ingredients in a large bowl.
- Pour in the pureed ingredients and stir gently until almost blended.
- Fold in the strawberries gently.
- Bake 20 minutes.
- Cool 10 minutes before removing from tins.
