How to make it

  • Preheat the oven to 375 F. Grease 12 large muffin cups and the top of the tin (these are biggies!).
  • Puree the tofu, applesauce, potatoes, bananas, sugar, syrup, ginger and vanilla. Set aside.
  • Whisk together the dry ingredients in a large bowl.
  • Pour in the pureed ingredients and stir gently until almost blended.
  • Fold in the strawberries gently.
  • Bake 20 minutes.
  • Cool 10 minutes before removing from tins.
