Here's a great muffin recipe for those church breakfast get togethers!

Ingredients
- 1 Tablespoon butter or margarine, softened
- 1/2 cup granulated white sugar
- 1 egg
- 2/3 cup Grape-Nuts cereal(or other cereal)
- 1 (8oz) can crushed pineapple (1 Cup) undrained
- 1 cup mashed very RIPE bananas (2 to 3)
- 2 cups biscuit mix ( Bisquick )
- 1 teaspoon cinnamon
- 1/2 to 1 cup chocolate chips(optional)
Directions
- Preheat oven to 425 degrees F
- Line muffin tins with paper liners.
- Cream margarine with sugar.
- Add egg and beat well.
- IF MIXTURE SEEMS TOO DRY, OR YOU HAVE EXTRA BANANAS, ADD ANOTHER EGG.
- Add cereal, pineapple with juice, bananas, biscuit mix & cinnamon.
- Stir until just blended.
- Mixture will be lumpy.
- Stir in chocolate chips(if desired)
- Fill muffin cups 2/3 full of batter;
- Bake 15 - 20 minutes, or until tops are light brown & toothpick comes out clean.
- CAREFUL! BOTTOMS WILL BURN IF YOU LET TOP GET TOO BROWN!!
- Make 18 - 20 regular or 12 large muffins
