Ingredients

How to make it

  • Preheat oven to 350 degrees F
  • Stir together flour, cocoa, bakin' powder, salt and cinnamon.
  • Set aside.
  • Cream shortenin' and sugar until light. Add eggs & beat 'til fluffy.
  • Add potatoes and vanilla.
  • Mix until blended.
  • Stir in flour mixture alternately with milk.
  • Stir in nuts.
  • Por into a greased 13 x 9 x 2 inch pan.
  • Bake for 40 - 45 minutes.
  • Cool in the pan.
  • Cut into bars.
  • Serve with whipped cream or ice cream!

    I guess if you can make potato bread, you can make potato cake? LOL Mashed potatoes make soft, moist bread so I suppose this cake would be tender and moist too. Great idea. Think I'll try it. Thanks for posting :)

    This sounds really interesting. I have never heard of potatoes in a cake before.I bet they make the cake relly moist if I had to guess. Thanks for this post. I am printing it out.
