Hot Cross Muffins

- 2oz / 50g almond paste shopping list
- 8oz / 225g all-purpose flour shopping list
- 1 Tbsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 3oz / 75g caster sugar shopping list
- 1 tsp mixed spice (cinnamon, nutmeg, allspice) shopping list
- 8oz / 200g mixed dried fruit shopping list
- 6oz / /150ml 2% or semi-skimmed milk shopping list
- 1 egg shopping list
- 2oz / 50g butter shopping list
How to make it
- Preheat oven to 400F/200C/180C Fan/Gas Mark 6
- Line a muffin tin with 9 cupcake papers or baking parchment squares, scrunched in.
- Thinly roll out almond paste and cut into 18 thin strips.
- Mix flour, baking powder, baking soda, sugar, spice and dried fruit.
- In a separate bowl, mix the egg, milk and butter.
- Add milk mixture to dry mixture and beat lightly until well mixed.
- Pour mixture into prepared tin, dividing evenly.
- Top each with 2 strips of almond paste, making a cross.
- Bake for 15 - 18 minutes until golden brown.
- You may, if you llke, push a ball of almond paste into the center of each muffin before baking.
