Hot cross buns, muffin style!

Ingredients
  • 2oz / 50g almond paste
  • 8oz / 225g all-purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp baking soda
  • 3oz / 75g caster sugar
  • 1 tsp mixed spice (cinnamon, nutmeg, allspice)
  • 8oz / 200g mixed dried fruit
  • 6oz / /150ml 2% or semi-skimmed milk
  • 1 egg
  • 2oz / 50g butter

Directions
  1. Preheat oven to 400F/200C/180C Fan/Gas Mark 6
  2. Line a muffin tin with 9 cupcake papers or baking parchment squares, scrunched in.
  3. Thinly roll out almond paste and cut into 18 thin strips.
  4. Mix flour, baking powder, baking soda, sugar, spice and dried fruit.
  5. In a separate bowl, mix the egg, milk and butter.
  6. Add milk mixture to dry mixture and beat lightly until well mixed.
  7. Pour mixture into prepared tin, dividing evenly.
  8. Top each with 2 strips of almond paste, making a cross.
  9. Bake for 15 - 18 minutes until golden brown.
  10. You may, if you llke, push a ball of almond paste into the center of each muffin before baking.
