How to make it

  • Preheat oven to 400F/200C/180C Fan/Gas Mark 6
  • Line a muffin tin with 9 cupcake papers or baking parchment squares, scrunched in.
  • Thinly roll out almond paste and cut into 18 thin strips.
  • Mix flour, baking powder, baking soda, sugar, spice and dried fruit.
  • In a separate bowl, mix the egg, milk and butter.
  • Add milk mixture to dry mixture and beat lightly until well mixed.
  • Pour mixture into prepared tin, dividing evenly.
  • Top each with 2 strips of almond paste, making a cross.
  • Bake for 15 - 18 minutes until golden brown.
  • You may, if you llke, push a ball of almond paste into the center of each muffin before baking.
