Osso buco

- 4 knuckles of veal shopping list
- 2 carrots shopping list
- 1 parsley root shopping list
- 1 onion shopping list
- 2 baby leeks or one piece of leek shopping list
- 2 sellerie stalks shopping list
- 1 twig rosemary shopping list
- 3 twigs thyme shopping list
- 1 bay leaf shopping list
- 1 green garlic or a garlic clove shopping list
- 100 g tomato puree shopping list
- flour shopping list
- 500 ml veal stock shopping list
- 1 bottle dry red wine shopping list
- 200 ml cream shopping list
- juice of one lemon shopping list
- olive oil shopping list
- butter shopping list
- salt, pepper shopping list
How to make it
- Salt, pepper knuckels and turn in flour
- Melt butter in some olive oil and fry meat, after put aside.
- In the same pot add chopped onion, and chopped veggies, tomato puree and roast.
- Pour veal stock and red wine and reduce. Add herbs and meat.
- Put it into the oven on 170°C for about 90 minutes.
- Take meat out, puree and cook together with cream and lemon juice for some more minutes.
- Serve with pasta and gremolata which contains garlic, parsley and grated lemon peel.
