Ingredients
  • 4 knuckles of veal
  • 2 carrots
  • 1 parsley root
  • 1 onion
  • 2 baby leeks or one piece of leek
  • 2 sellerie stalks
  • 1 twig rosemary
  • 3 twigs thyme
  • 1 bay leaf
  • 1 green garlic or a garlic clove
  • 100 g tomato puree
  • flour
  • 500 ml veal stock
  • 1 bottle dry red wine
  • 200 ml cream
  • juice of one lemon
  • olive oil
  • butter
  • salt, pepper

Directions
  1. Salt, pepper knuckels and turn in flour
  2. Melt butter in some olive oil and fry meat, after put aside.
  3. In the same pot add chopped onion, and chopped veggies, tomato puree and roast.
  4. Pour veal stock and red wine and reduce. Add herbs and meat.
  5. Put it into the oven on 170°C for about 90 minutes.
  6. Take meat out, puree and cook together with cream and lemon juice for some more minutes.
  7. Serve with pasta and gremolata which contains garlic, parsley and grated lemon peel.
