Yorkshire Toad-in-the-hole Recipe

Ingredients

Batter:

8oz all-purpose flour

1/4tsp salt

2 eggs

1 pint milk

Filling:

4oz lard or shortening

8 large pork sausages

8 strips bacon

2Tbsp English mustard (or spicy yellow mustard)

Directions

Preheat oven to 400F/200C/gas Mark 5

Sift flour and salt into a large bowl

Make a well in the center and drop in the egg (crack it open, please!!!)

Add milk and mix into a smooth batter

Set aside for at least two hours

Filling:

Melt the lard or shortening in a fairly deep roasting pan (round or square, metal or ceramic) by placing it in the oven

While the lard is melting, wrap each sausage with a strip of bacon that has been spread with the mustard

Place sausages in the pan with the melted lard and cook for about 5 minutes

Remove the pan from the oven and turn the sausages

Pour batter over the sausages and bake for 25 minutes

Serve with English or spicy mustard and cooked green peas with carrot coins
