Toad-in-the-Hole is a lovely, tasty dish that you can have for breakfast, lunch or dinner. Make the batter ahead of time so it can set and be used for lunch or supper, or set overnight to be used at breakfast.

Ingredients
  • Batter:
  • 8oz all-purpose flour
  • 1/4tsp salt
  • 2 eggs
  • 1 pint milk
  • Filling:
  • 4oz lard or shortening
  • 8 large pork sausages
  • 8 strips bacon
  • 2Tbsp English mustard (or spicy yellow mustard)

Directions
  1. Preheat oven to 400F/200C/gas Mark 5
  2. Sift flour and salt into a large bowl
  3. Make a well in the center and drop in the egg (crack it open, please!!!)
  4. Add milk and mix into a smooth batter
  5. Set aside for at least two hours
  6. Filling:
  7. Melt the lard or shortening in a fairly deep roasting pan (round or square, metal or ceramic) by placing it in the oven
  8. While the lard is melting, wrap each sausage with a strip of bacon that has been spread with the mustard
  9. Place sausages in the pan with the melted lard and cook for about 5 minutes
  10. Remove the pan from the oven and turn the sausages
  11. Pour batter over the sausages and bake for 25 minutes
  12. Serve with English or spicy mustard and cooked green peas with carrot coins
