Yorkshire Toad-in-the-hole

- Batter: shopping list
- 8oz all-purpose flour shopping list
- 1/4tsp salt shopping list
- 2 eggs shopping list
- 1 pint milk shopping list
- Filling: shopping list
- 4oz lard or shortening shopping list
- 8 large pork sausages shopping list
- 8 strips bacon shopping list
- 2Tbsp English mustard (or spicy yellow mustard) shopping list
How to make it
- Preheat oven to 400F/200C/gas Mark 5
- Sift flour and salt into a large bowl
- Make a well in the center and drop in the egg (crack it open, please!!!)
- Add milk and mix into a smooth batter
- Set aside for at least two hours
- Filling:
- Melt the lard or shortening in a fairly deep roasting pan (round or square, metal or ceramic) by placing it in the oven
- While the lard is melting, wrap each sausage with a strip of bacon that has been spread with the mustard
- Place sausages in the pan with the melted lard and cook for about 5 minutes
- Remove the pan from the oven and turn the sausages
- Pour batter over the sausages and bake for 25 minutes
- Serve with English or spicy mustard and cooked green peas with carrot coins
