Chicken David Recipe
This is one of my favorite dishes. The prep time is time consuming..but worth the wait in the end. I usually serve this over fresh fettucine.

Ingredients
  • 3 tbsp butter
  • 1 onion, chopped
  • 8 fresh mushrooms, thinly sliced
  • 1 clove garlic, chopped
  • 1/4 lb thinly sliced prosciutto, cut into strips
  • ¼ lb thinly sliced hard salami, cut into strips
  • 4 boneless, skinless chicken breast halves
  • 1 c all purpose flour
  • salt and pepper, to taste
  • 1 small can of baby peas
  • ½ c dry sherry
  • 1 c chicken broth
  • ½ cu heavy cream
  • ½ marinara sauce
  • 1 tbsp butter
  • 2 tbsps chopped parsley

Directions
  1. Melt 3 tbsp butter in a large heavy skillet over medium heat. Sautee onion until soft and translucent.
  2. Stir in mushrooms, garlic, proscuitto and salami.
  3. Dredge chicken in flour and place in pan. Season with salt and pepper. Cook chicken 5 minutes on each side Pour in sherry and cook until liquid is reduced by half. Stir in chicken broth, cream and marinara. Simmer until sauce is reduced to your preferred consistency.
  4. Stir in peas, cook until heated through.
  5. Stir in 1 tbsp butter, and sprinkle with parsley.
