Almond Paste

- 1 1/2 cups (8 ounces by weight) whole blanched almonds shopping list
- 1 1/2 cups (5 ounces by weight) sifted confectioners' sugar shopping list
- 1 egg white shopping list
- 1 teaspoon almond extract shopping list
- 1/4 teaspoon salt shopping list
How to make it
- In a food processor, grind half the almonds until very fine. Remove and repeat with remaining almonds. Total ground nuts will yield 1-3/4 cups.
- Put all nuts and remaining ingredients in the food processor. Cover and process until a paste forms.
- Gather together and store, tightly sealed, in a plastic bag.
- Yield: 1-1/3 cups (13 ounces).

I've never used almond paste. I was looking for a recipe to use the can of almond paste that I have and came across this. thanks I now have it to make myself.

Almond paste is used to make marzipan, right? I've always been curious about marzipan, ever since I saw it in my old Betty Crocker Cookbook (circa 1961). Thanks for the heads up on a DIY almond paste.
