Ingredients
  • 2 teaspoons olive oil
  • 1/4 red onion, sliced
  • 1 tablespoon finely chopped garlic
  • 1/2 cup good white wine
  • 1/2 cup cream
  • 1/4 teaspoon black pepper
  • 8 slices sun dried tomato
  • 1 tablespoon pesto

Directions
  1. Sweat onion and garlic in oil for 2 to 3 minutes. Do not brown.
  2. Add white wine, cream, black pepper and sun dried tomatoes and bring to a boil in a large pan.
  3. Turn down heat to simmer. Cover and cook 2 to 3 minutes.
  4. Add pesto to sauce.
  5. Warm through.
  6. Serve with steamed mussels.
