Raspberry Custard Bars Recipe

Ingredients
  • 2 cups flour
  • 1 1/3 cups plus 1/2 cup sugar, divided
  • 1 cup (2 sticks) butter or margarine, at room temperature
  • 1 (14-ounce) can EAGLE BRAND® Sweetened Condensed Milk
  • 3 eggs
  • 4 cups fresh or frozen raspberries
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 teaspoon vanilla extract
  • 1 cup whipping cream, whipped

Directions
  1. Preheat oven to 350°F.
  2. In large bowl, mix flour, 1/3 cup sugar and butter until well combined. Press firmly on bottom of 13x9-inch baking pan. Bake 10 minutes.
  3. In large bowl, with mixer, beat 1 cup sugar, EAGLE BRAND® and eggs. Fold in raspberries; spread mixture over hot crust.
  4. Bake until custard is set, about 40 to 45 minutes. Cool completely.
  5. In medium bowl, beat cream cheese, remaining 1/2 cup sugar and vanilla until smooth. Fold in whipped cream. Spread over bars. Chill. Cut into bars.
  6. Store leftovers covered in refrigerator.

This recipe makes me feel a bit homesick...I haven't had raspberries in ages, I am living in South Australia were they are hard to come by and expensive....My mum grows them back in Canada and I have always had the good fortune of having them fresh off the bush. I will be trying this recipe with the frozen berries. Thanks
