How to make it

  • Preheat oven to 375
  • In two shallow baking pans, large enough to spread the onions in one layer, combine onions, garlic, salt, oil, bay leaves, and thyme
  • Roast for about 45 minutes, stirring every 15 minutes until the onions have softened and lightly browned.
  • Remove onions from oven, add the wine to the pans, and stir with a spoon (wooden works great) to deglaze
  • Transfer onion mixture to soup pot
  • Add stock and soy sauce
  • Cover pot, bring to a boil
  • Lower heat and gently simmer for about 25 minutes
  • Discard bay leaves and add salt and pepper to taste
  • Optionally top each bowl with grated gruyere or swiss cheese and herbed croûtons
  • Enjoy!
