Vegan Italian Pasta Salad Recipe
Sweet balsamic vinegar, bright cherry tomatoes and fresh basil will bring a delight to your lunch table or dinner party!

Ingredients
  • 8 oz (uncooked) whole wheat spiral pasta
  • 1 1/2 tbsp balsamic vinegar
  • 1 tbsp vegetable broth or pasta cooking water
  • 1/2 tsp dried oregano
  • 1 cup cherry tomatoes, halved
  • 1/2 cup basil, fresh, chopped
  • 1/2 cup fresh baby spinach leaves, washed
  • 1/4 tsp table salt, or to taste
  • 1/4 tsp black pepper

Directions
  1. Cook pasta about 8 minutes, unil al dente.
  2. Drain and transfer to a large bowl.
  3. Add vinegar, broth and oregano; toss to coat.
  4. Fold in tomatoes, basil and spinach.
  5. Season to taste with salt and pepper.
  6. Serve room temperature, or chilled if desired.
