How to make it

  • NOTE: The amount of food coloring, if you choose to use it, can vary from 4 drops to 6 drops.
  • In a saucepan, bring the flowers and water to a boil. Boil for 4 minutes.
  • Strain the water through a damp jelly bag or cheesecloth, reserving 3 cups of the water. Discard the blossoms.
  • In a large kettle, combine dandelion liquid and pectin; stir well.
  • Bring to a rolling boil over high heat and add the sugar, stirring constantly.
  • Remove from the heat. Add the extract and coloring, if you choose to use it.
  • Skim off the foam.
  • Pour the HOT liquid into hot sterilized jars, leaving 1/4 inch head space in each jar. Adjust the lids.
  • Process for 5 minutes in a boiling water bath.

    I use to make this every year and can it by the dozens because most of my friends who lived in the city couldn't trust making it themselves due to the heavy dog traffic. I now live back in the city and miss it so much. I can't wait to go back to the mountains where the plants and other natural resources are so much safer. You made me homesick but so glad you shared this recipe with others. Some good eats, economical and pretty good amount of vitamin C in there too. Ps... I never think of dandelions as weeds! ;)
