How to make it

  • Combine the dandelion, water, ginger, cloves and orange juice and zest in a large pot. Bring to a boil, reduce heat and simmer for 30 minutes. Strain, add the sugar, return to the pot.
  • Bring the syrup to a boil, reduce heat and leave it at a high simmer for 30 minutes.
  • Remove from heat. When still warm but nearly room temperature, add the yeast and mix thoroughly.
  • Put in a big crock and let it sit for two weeks.
  • Skim and discard any foam.
  • Pour into bottles and cork.
  • Age for 6 months.

    It is so neat that you posted this. My grandma used to make Dandelion wine when I was a kid. My best memories with my grandma were in her kitchen, watching her make things.

    By the way panela sugar also goes by the name mexican sugar, unrefined or whole sugar. HTH

    Wondering about the panela sugar and winemaking yeast too. Is it different from brewer's yeast? Love the sound of this. Pretty romantic, don't you think, to make blossom wine, with your own hands, in your own kitchen and lift a glass to the lips of your lover? (and get him drunk and at your mercy too *grin* )

    I have always wanted a recipe for dandelion wine. They're free here you know. What is panela sugar, though? Not sure where to get that or winemaking yeast.
