Dandelion Wine Recipe

Ingredients

1 gallon fresh dandelion blossoms

1 gallon water

2 t freshly grated ginger

8 whole cloves

Juice and zest of 4 orange

4T winemaking yeast

8 pounds panela sugar

Directions

Combine the dandelion, water, ginger, cloves and orange juice and zest in a large pot. Bring to a boil, reduce heat and simmer for 30 minutes. Strain, add the sugar, return to the pot.

Bring the syrup to a boil, reduce heat and leave it at a high simmer for 30 minutes.

Remove from heat. When still warm but nearly room temperature, add the yeast and mix thoroughly.

Put in a big crock and let it sit for two weeks.

Skim and discard any foam.

Pour into bottles and cork.

Age for 6 months.
