How to make it

  • Heat 2 T vegetable oil and 2 t sesame oil in heavy skillet over high heat. Add garlic and ginger, cook, stirring until garlic softens, about 1 minute. Add spinach and cook till leaves soften about 2 minutes. Add soy sauce, sesame seeds and pepper; toss to combine. Cover skillet, place in 200 degree oven to keep warm while scallops cook.
  • Heat remaining vegetable and sesame oils over med-high heat in a grill pan or heavy skillet. Sear scallops until dark golden brown, about 2 minutes per side. Serve scallops over the spinach.
  • This recipe can be halved to serve 2 very easily.

    This sounds delicious! It is a must make very soon. I have fresh spinach in the fridge now, and some scallops in the freezer, I've stocked up on since making scallop soup posted from victoriaregina. 5 from me
