Seared Scallops Over Baby Spinach Recipe

Ingredients
  • 4 T vegetable oil
  • 4 t sesame oil
  • 4 cloves garlic, minced
  • 2" piece fresh ginger, minced
  • 2 10oz bags baby spinach
  • 2 T soy sauce
  • 2 T sesame seeds, toasted
  • 1 1/2 lbs sea scallops
  • freshly ground pepper

Directions
  1. Heat 2 T vegetable oil and 2 t sesame oil in heavy skillet over high heat. Add garlic and ginger, cook, stirring until garlic softens, about 1 minute. Add spinach and cook till leaves soften about 2 minutes. Add soy sauce, sesame seeds and pepper; toss to combine. Cover skillet, place in 200 degree oven to keep warm while scallops cook.
  2. Heat remaining vegetable and sesame oils over med-high heat in a grill pan or heavy skillet. Sear scallops until dark golden brown, about 2 minutes per side. Serve scallops over the spinach.
  3. This recipe can be halved to serve 2 very easily.

This sounds delicious! It is a must make very soon. I have fresh spinach in the fridge now, and some scallops in the freezer, I've stocked up on since making scallop soup posted from victoriaregina. 5 from me
