Seared Scallops Over Baby Spinach

- 4 T vegetable oil shopping list
- 4 t sesame oil shopping list
- 4 cloves garlic, minced shopping list
- 2" piece fresh ginger, minced shopping list
- 2 10oz bags baby spinach shopping list
- 2 T soy sauce shopping list
- 2 T sesame seeds, toasted shopping list
- 1 1/2 lbs sea scallops shopping list
- freshly ground pepper shopping list
How to make it
- Heat 2 T vegetable oil and 2 t sesame oil in heavy skillet over high heat. Add garlic and ginger, cook, stirring until garlic softens, about 1 minute. Add spinach and cook till leaves soften about 2 minutes. Add soy sauce, sesame seeds and pepper; toss to combine. Cover skillet, place in 200 degree oven to keep warm while scallops cook.
- Heat remaining vegetable and sesame oils over med-high heat in a grill pan or heavy skillet. Sear scallops until dark golden brown, about 2 minutes per side. Serve scallops over the spinach.
- This recipe can be halved to serve 2 very easily.
