Great way to revive leftover mashed potatoes. I make this the next morning as a brunch side, instead of the usual hashbrowns. I pray for leftover potatoes after a holiday dinner or weekend dinner to make this side!

One of my favorites- try adding a bit of grated cheese and/or chopped green onion to the mixture. It is great.
