Mashed Potato Pancakes

- 2 cups or more Leftover mashed potatoes, cold shopping list
- 1/2 cup of flour shopping list
- oil for frying shopping list
How to make it
- Start heating the frying pan with 1/4 inch of oil.
- Take a heaping spoonful of cold mashed potatoes shape into a patty.
- Dip patty into flour, making sure that the patty is entirely dusted with the flour.
- Fry. Carefully, flip the potato pancakes (I use 2 spantulas) over to fry both sides until golden brown. 1 - 2 minutes (Be Gentle it all depends on the consistcy of your mashed potatoes). Set aside on paper towel to drain oil.
- Serve by itself or with a condiment of your choice; I like ketchup.
