Roasted Poblano Vinaigrette

- 2 poblano peppers roasted peeled and seeded shopping list
- 1/4 medium red onion chopped shopping list
- 2 tablespoons fresh lime juice shopping list
- 3/4 cup olive oil shopping list
- 1/2 cup spinach shopping list
- 2 teaspoons honey shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- In a blender combine poblanos, onion and lime juice then blend until smooth.
- While the blender is running add oil slowly until emulsified.
- Add spinach and blend until smooth.
- Add honey, salt and pepper.
- Bring to room temperature before serving.

Delicious! Not only is this good on salad, my daughter started dipping her chicken into it and announced it was good that way too! It's very important to slowly drizzle the oil to get a nice thick, creamy dressing. Thanks CM!! Added more in the ...more
