How to make it

  • In a blender combine poblanos, onion and lime juice then blend until smooth.
  • While the blender is running add oil slowly until emulsified.
  • Add spinach and blend until smooth.
  • Add honey, salt and pepper.
  • Bring to room temperature before serving.

    Delicious! Not only is this good on salad, my daughter started dipping her chicken into it and announced it was good that way too! It's very important to slowly drizzle the oil to get a nice thick, creamy dressing. Thanks CM!! Added more in the IMI ---------> Roasted Poblano Vinaigrette
