Roasted Poblano Vinaigrette

    I decided to make a side salad to go with dinner tonight and needed a dressing! Went through my recipe box and found this and thought it sounded different and interesting. I only had 1 poblano so I just halved the recipe. I eyeballed the spinach, but pretty sure I was closer to the full amount lol. The honey balances out the slight bitterness of the spinach and it was delicious! I wanted to get a pic. with the dressing drizzled on the salad, but it didn't happen :( Oh well always next time :)
