How to make it

  • Preheat oven to 350F.
  • Line a rectangular roasting pan with aluminum foil and drizzle veg oil in the pan, about 1 oz
  • Wash and cube potatoes. Make the cubes about 1/4 inch square
  • Put cubes in the pan and toss them with your hands to coat them with oil
  • Chop the pepper and onion into pieces the same size as the potato cubes (or smaller, if you prefer)
  • Add them to the pan and mix them in with the potatoes by hand to coat them with veg oil (add a little more oil if needed)
  • Sprinkle with a little salt
  • Bake for 30 min or until potatoes are tender and browned. You can gently toss the potatoes 10 minutes into the baking time to evenly brown all of them.
  • This dish goes great with sausage or ham.
  • P.S. Yesterday I made this and added some cubed sliced corned beef and it made great corned beef hash.

    This is a good recipe. I have had it before but coated the potatoes in cornmeal. Either way, will be great!
