Ingredients
  • BASIC QUICHE-plain yet delicious!
  • 6 sheets of crumbled-up matzoh (matzah)
  • 6 eggs, beaten
  • 1 cup of grated cheddar or monterey jack (you can try all of your favorite cheeses including swiss or gruyere)
  • 1 Tb. butter or margarine to brush over the top before baking.

  • QUICHE VARIETIES:
  • *Mushroom Quiche*
  • 1 cup sauteed (in butter) sliced mushrooms, gruyere cheese, cheddar or jack cheese (add onions or garlic if you wish)
  • *Zuchinni Quiche*
  • Add 1 cup pre-cooked zuchinni and use monterey jack cheese or swiss
  • *Potato Quiche*
  • 1 cup of sliced or chopped cooked potatoes with cheddar cheese
  • OR Swiss
  • *Tomato Quiche*
  • Add 1/2 cup chopped fresh tomatoes or canned, 1/2 cup parmesan cheese, 1/2 cup mozzarella cheese (You can use a small can of Rotel tomatoes and chiles or 1/2 of your favorite salsa (if you use salsa or a spicy tomato mix, use monterey jack cheese!)
  • *Spinach Quiche*
  • Add 1 cup fresh spinach leaves or 1/2 cup cooked spinach with 1 cup of gruyere, jack, cheddar or swiss cheese and sprinkle top with parmesan. ( If you place fresh spinach leaves over the top of the quiche and then spread with butter, you'll have a lovely -looking quiche!)
  • *Black Olive and Green Onion Quiche*
  • Add 1/2 cup whole olives and 1/2 cup chopped green scallions. Use Jack or white cheddar.
  • *Asparagus Quiche*
  • Add 1 can of asparagus, drained and chopped or 12 fresh, chopped and lightly steamed asparagus. Use Gruyere or Swiss cheese.
  • *Artichoke Quiche*
  • 1 thawed box of artichoke hearts, sauteed in butter and chopped well. I love monterey jack in this recipe.
  • *******************************************************
  • For a sweet quiche, try these recipes!
  • *Coconut Quiche*
  • Add 1 cup of sweetened coconut, 1/4 cup chocolate chips and sprinkle with powdered sugar when cooled. (Its almost a pie!)
  • You can pour melted chocolate over the top or add a ganache topping or drizzle!
  • *Apple Quiche* (Try peaches, too!)
  • 1 1/2 can apple pie filling or 2 fresh granny smith apples, peeled and chopped, 1 Tb cinnamon, 1/4 tsp. nutmeg, 2 Tb granulated sugar (and a few raisins or walnuts!).
  • *Raisin Walnut Quiche *(This is so good!)
  • 1/2 cup chopped walnuts
  • 1 /2 cup raisins (soaked in warm wine or orange juice for 15 minutes and drained.
  • 1 tsp. cinnamon
  • You can add chocolate chips if you wish and sprinkle lightly with powdered sugar as soon as it comes out of the oven OR sprinkle with 1 TB of granulated sugar after you brush the top with butter before putting it into the oven. (The sugar will brown over the top. You can use brown sugar.)
  • *Pineapple Quiche*
  • Add 1/2 cup cottage cheese and 1/2 crushed and drained pineapple. Add a few raisins if you like!

Directions
  1. Soak the crumbled matzoh in a small amount of warm water until it is soft.
  2. Blend eggs into matzoh and sprinkle lightly with salt and pepper.
  3. If you are adding a vegetable, do so now, stirring into the egg mixture.
  4. Add the cheese of your choice and blend all.
  5. Place into a quiche pan or pie pan, spreading evenly.
  6. Brush the top with butter or margarine.
  7. Bake for 30-40 minutes.
  8. For a special touch, I make these in small, individual tins so that each guest has their own quiche. You can use large cupcake paper liners or small cake liners found in restaurant supply chain stores.
  9. The dessert quiches can be topped with freshly-whipped cream.
