How to make it

  • Soak the crumbled matzoh in a small amount of warm water until it is soft.
  • Blend eggs into matzoh and sprinkle lightly with salt and pepper.
  • If you are adding a vegetable, do so now, stirring into the egg mixture.
  • Add the cheese of your choice and blend all.
  • Place into a quiche pan or pie pan, spreading evenly.
  • Brush the top with butter or margarine.
  • Bake for 30-40 minutes.
  • For a special touch, I make these in small, individual tins so that each guest has their own quiche. You can use large cupcake paper liners or small cake liners found in restaurant supply chain stores.
  • The dessert quiches can be topped with freshly-whipped cream.
