Use on steak, potatoes, corn, chicken--anything.

Ingredients
- 1 lb. unsalted butter, room temperature
- 8 oz blue cheese
- 1 shallot, minced
- 3 sprigs thyme, tear off leaves
- 3 sprigs parsley, chopped
- salt and pepper to taste
Directions
- Beat butter until smooth. Add crumbled cheese, shallot and herbs, mix.
- Season with cracked pepper and course salt.
- Roll in plastic wrap, chill until set. To serve, unwrap, slice and place on hot steaks, corn, potatoes etc.
