Ingredients
  • 1 lb. unsalted butter, room temperature
  • 8 oz blue cheese
  • 1 shallot, minced
  • 3 sprigs thyme, tear off leaves
  • 3 sprigs parsley, chopped
  • salt and pepper to taste

Directions
  1. Beat butter until smooth. Add crumbled cheese, shallot and herbs, mix.
  2. Season with cracked pepper and course salt.
  3. Roll in plastic wrap, chill until set. To serve, unwrap, slice and place on hot steaks, corn, potatoes etc.
