How to make it

  • Finely shred potatoes & onion (use food processor shredder disk to save time and knuckles!) into bowl of water; drain well - squeeze dry. Mix potatoes, egg, flour (or potato starch) & salt; mix well. Press into WELL greased LARGE cookie sheet. Bake at 425 for 15 minutes. Brush with 1 T. oil (I spray with olive oil Pam); bake 10 minutes more. Place under broiler & broil 5" from heat 5 minutes or until golden & crisp.
  • Toss veggies (except tomatoes & basil) with 1 T. olive oil, spread on baking sheet (I like to do this earlier in the day) & roast at 450 until nicely roasted. Remove & cool.
  • Sprinkle crust with feta, top with veggies & fresh tomatoes. Sprinkle with mozzarella & basil. Bake at 425 5-7 minutes or until cheese just begins to brown.
