This is an old, old recipe that is comfort food at its best. It doesn't have any weird or exotic flavor combos. It's just good food. Serve with mashed potatoes

Ingredients
  • 1 1/2 lbs ground chuck
  • 2 eggs, beaten
  • 1 cup oatmeal
  • 1 tsp garlic, minced
  • 3/4 cup onion, diced
  • 3/4 cup celery, diced
  • 1/2 cup green pepper, diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 1 tbs Worcestershire sauce
  • 1/3 cup ketchup
  • 1/3 cup milk
  • Sauce
  • 1 cup ketchup
  • 2 Tbs Worcestershire Sauce
  • 1 can (10.5 oz) tomato sauce or puree
  • Salt & pepper to taste

Directions
  1. Combine all ingredients. Mix gently until all ingredients are combined. Overworked meat will become tough. Form into a loaf and bake at 350 for about one hour or until 165 degrees. About 5 minutes before removing from oven cover with sauce. Let rest 15 minutes before slicing to serve. Reserve additional sauce to use as gravy with mashed potatoes.
  2. Sauce: Combine all ingredients and bring to heat. Let flavors marry. Do not cook for more than 5 minutes.
  3. If you are cooking for yourself or a couple of people, or pressed for time, consider cooking these in muffin pans. Individual servings for everyone and cooking time is greatly reduced. Leftovers can be frozen, or just halve the recipe.

Sounds down right comforting. I will be making this very soon. I love meatloaf and this one sounds like it is right up my alley. Thanks for sharing.

I tried this and it is fantastic. This is a keeper recipe. Thanks Chefjeb

This was the best meatloaf we have tried! Neither tough nor dry, and the sauce was not dried out to nothing in the oven. Thanks!

Sounds amazing....looks like the best meatloaf recipe on here...Full of fresh ingredients...Can't wait to try it!

Hum......I don't see a cooking temp. I have this already mixed up and ready for the oven so I am going to guess 350'. Hope I am right because it sounds so good!!
Thanks for the post!!!

Dinner was fantastic thanks to your wonderful meatloaf recipe!!! Yum, Yum, Yummmmmmmmmm.......

This was very good! I made it exactly as written! The only thing I would do differently next time is to saute all the veggies before adding it to the meat so that they wouldn't be as crunchy. But that's just a personal preference. I added a photo.

This is just how I like my meatloaf! Good one, jeb! ;')

Made this last night. Very tasty. Thanks.
