A NICE SPICY - JALAPENO -BAKED POTATOE CASSEROLE-

Ingredients
- 8 - MEDIUM BOILING POTATOES ( about 4 pounds)
- salt and pepper to taste
- 1 green bell pepper, chopped
- 1 red bell pepper chopped
- 8 green onions chopped ( 1- med purple onion) chopped
- 1 cup butter, melted
- 2 tablespoon flour
- 2 - cups milk
- 1 roll of jalapeno cheese ( 6 ounces)
- 1 roll ( 6 ounces ) of garlic cheese
- 1 jar ( 4 ounces ) pimientos, drained
- ******** want it spicier add some chopped jalapeno peppers to it ***
Directions
- Preheat oven to 350 degrees F.
- boil potatoes whole just until tender.
- peel and slice.
- in a flat buttered 3 quart casserole dish, layer potatoe slices and season with salt and pepper.
- saute' peppers and onions in 1/2 cup butter until tender.
- set aside
- in a saucepan, combine flour and 1/2 cup butter and stir until bubbly.
- add milk and cheeses and stir over medium heat until cheese melts.
- add onion mixture and pimientos.blend well
- pour over potatoes and bake for 45 minutes.
- you can make ahead the night before.......if needed
