Ingredients

How to make it

  • Preheat oven to 350 degrees F.
  • boil potatoes whole just until tender.
  • peel and slice.
  • in a flat buttered 3 quart casserole dish, layer potatoe slices and season with salt and pepper.
  • saute' peppers and onions in 1/2 cup butter until tender.
  • set aside
  • in a saucepan, combine flour and 1/2 cup butter and stir until bubbly.
  • add milk and cheeses and stir over medium heat until cheese melts.
  • add onion mixture and pimientos.blend well
  • pour over potatoes and bake for 45 minutes.
  • you can make ahead the night before.......if needed
