Pineapple Beets

- 13 1/2 ounce can pineapple chunks shopping list
- 1/2 cup water shopping list
- 1/3 cup apple cider vinegar shopping list
- 1/4 cup firmly packed brown sugar (I prefer dark brown) shopping list
- 1 Tbsp cornstarch shopping list
- 1/2 tsp salt shopping list
- 1/8 tsp ground ginger shopping list
- 4 cups sliced drained canned beets (about 2 1-lb cans) shopping list
How to make it
- Drain syrup from the pineapple and combine with water and vinegar.
- Mix together brown sugar, cornstarch, salt and ginger in a small saucepan, then stir vinegar mixture in and mix completely.
- Cook over medium heat.
- Stir constantly until the mixture thickens,
- Add beet slices and bring to a boil.
- Just before you are ready to eat, stir the pineapple chunks into the hot mixture and serve.
