How to make it

  • Drain syrup from the pineapple and combine with water and vinegar.
  • Mix together brown sugar, cornstarch, salt and ginger in a small saucepan, then stir vinegar mixture in and mix completely.
  • Cook over medium heat.
  • Stir constantly until the mixture thickens,
  • Add beet slices and bring to a boil.
  • Just before you are ready to eat, stir the pineapple chunks into the hot mixture and serve.
