This is one of my favourite Indian dishes, but done it in my own way. Feel free to modify the ingredients and suggest any changes if u like. =]

Ingredients
  • About 500g Fresh or Frozen Spinach
  • 100g cubed Tofu (can substitute with Indian Paneer Cheese or Feta)
  • 1/2 Onion
  • 1/2 Shallot (you can use 1 whole onion in place of 1/2 shallot)
  • 1 tsp Ginger Paste
  • 1 tsp Garlic Paste
  • 1 tsp Cumin Powder
  • 1 tsp Garam Masala
  • Chilli pepper/flakes, to taste
  • Salt, to taste
  • Oil, for cooking

Directions
  1. Boil spinach til wilted and soft.
  2. Drain water, mash (i used scissors to cut them up) THEN set aside.
  3. Heat oil in pot/pan, stir fry garlic paste, ginger paste, onions, shallots, garam masala and cumin for about one minute or until onions turn brown.
  4. Add mashed spinach, a tiny bit of water and salt. Stir through.
  5. Add tofu/cheese, and stir through once again (don't worry about the tofu breaking up).
  6. Once heated through, transfer to bowl and serve with roti or rice!
