Palak Paneer Tofu

- About 500g Fresh or frozen spinach shopping list
- 100g cubed tofu (can substitute with Indian Paneer cheese or feta) shopping list
- 1/2 onion shopping list
- 1/2 shallot (you can use 1 whole onion in place of 1/2 shallot) shopping list
- 1 tsp ginger paste shopping list
- 1 tsp garlic paste shopping list
- 1 tsp cumin powder shopping list
- 1 tsp garam masala shopping list
- Chilli pepper/flakes, to taste shopping list
- salt, to taste shopping list
- oil, for cooking shopping list
How to make it
- Boil spinach til wilted and soft.
- Drain water, mash (i used scissors to cut them up) THEN set aside.
- Heat oil in pot/pan, stir fry garlic paste, ginger paste, onions, shallots, garam masala and cumin for about one minute or until onions turn brown.
- Add mashed spinach, a tiny bit of water and salt. Stir through.
- Add tofu/cheese, and stir through once again (don't worry about the tofu breaking up).
- Once heated through, transfer to bowl and serve with roti or rice!
