How to make it

  • DOUGH:
  • =======
  • Work the butter with the fingertips into the cake flour, cream of tartar and salt until crumbly.
  • Mix the egg yolks, vinegar and icewater well together.
  • Mix wet and dry very well.
  • Put into a plastic bag and put in fridge for 6 hours.
  • Roll out thinly.
  • Press out with round cookie or pastry cutters.
  • Place into greased muffin pans.
  • FILLING:
  • =======
  • Melt the butter.
  • Stir in the cake flour until a soft ball forms.
  • Stir in the milk gradually with a whisk until there is no lumps.
  • Keep stirring until thick.
  • Take off heat.
  • Beat the eggs.
  • Stir into mixture.
  • Stir in all of the other ingredients.
  • Mix very well.
  • Fill the raw dough with mixture.
  • Bake at 360 deg F (180 deg C) for about 15 minutes or until golden brown.
